  • 8 oz penne pasta
  • 8 oz fresh calamari, cleaned and sliced into rings
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp red pepper flakes
  • 1/2 cup white wine
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Boil a large pot of salted water. Cook penne pasta according to package instructions until al dente (10-12 minutes). Reserve some pasta water before draining.
  2. In a large skillet over medium heat, add olive oil. Sauté minced garlic for about one minute until fragrant.
  3. Add calamari rings to the skillet and cook for two minutes until opaque but tender.
  4. Incorporate halved cherry tomatoes and red pepper flakes into the skillet; sauté for an additional three minutes.
  5. Pour in white wine and simmer for five minutes until reduced by half.
  6. Combine cooked penne with the squid mixture in the skillet. Toss well, adding reserved pasta water if needed for creaminess. Finish with fresh parsley.
