  • 2 Steelhead Trout Fillets (about 6 oz each)
  • 1 cup Fresh Peas (or frozen peas)
  • 2 cloves Garlic, minced
  • 2 tbsp Fresh Lemon Juice
  • 2 tbsp Olive Oil
  • Salt & Pepper to taste
  • 1/2 cup Heavy Cream
  • 2 tbsp Fresh Herbs (Dill or Parsley), chopped

Instructions

  1. Prepare Ingredients: Rinse and pat dry the steelhead trout fillets.
  2. Cook Peas: Boil peas in salted water for 3-4 minutes until tender; drain and set aside.
  3. Sauté Garlic: Heat olive oil in a skillet over medium heat. Add minced garlic; sauté for about 30 seconds.
  4. Make Sauce: Stir in heavy cream and lemon juice; simmer for 2-3 minutes until thickened. Fold in cooked peas, herbs, salt, and pepper.
  5. Cook Trout: In another skillet, heat olive oil over medium-high heat. Sear trout skin-side down for 4-5 minutes, then flip and cook for an additional 3-4 minutes.
  6. Serve: Plate the trout over the pea sauce and enjoy!
