  • 4 ears fresh corn (or 2 cups frozen corn)
  • 8 oz cream cheese (softened)
  • 1 cup sour cream (full-fat)
  • 2 tbsp mayonnaise
  • 1 tsp chili powder
  • ¼ cup fresh cilantro (chopped)
  • ½ cup jalapeños (diced, fresh or pickled)
  • ½ cup feta cheese (crumbled)

Instructions

  1. Boil or grill the corn until tender; if using frozen corn, thaw it. Let cool before cutting the kernels off the cob.
  2. In a mixing bowl, blend softened cream cheese, sour cream, and mayonnaise until smooth.
  3. Stir in chili powder and diced jalapeños.
  4. Gently fold in corn kernels, feta cheese, and chopped cilantro until well combined.
  5. Cover and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
