- 4 bone-in Iowa chops (1 inch thick)
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/3 cup pine nuts, toasted
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- 2. In a bowl, mix chopped spinach, feta cheese, pine nuts, minced garlic, salt, and pepper.
- 3. Cut pockets into each Iowa chop without slicing through. Generously stuff each pocket with the filling.

- 5. Transfer seared chops to the baking dish and bake for 25–30 minutes until internal temperature reaches 145°F (63°C).
