  • 4 cups cauliflower florets (fresh)
  • 1 cup bell peppers (mixed colors, sliced)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 1/4 cup rice vinegar
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil (for sautéing)
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Prepare a baking sheet with parchment paper.
  2. In a bowl, whisk together soy sauce, rice vinegar, brown sugar, cornstarch, sesame oil, and red pepper flakes. Set aside.
  3. Toss cauliflower florets with vegetable oil and spread them on the baking sheet. Roast for about 20 minutes until golden brown.
  4. In a skillet over medium heat, sauté onion and garlic until fragrant (2-3 minutes). Add bell peppers and roasted cauliflower.
  5. Pour the sauce over the vegetables and stir until everything is coated and heated through (about 5 minutes).
  6. Serve immediately over rice or noodles.
