Description

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 bell pepper (red or yellow), chopped
  • 1 small red onion, cut into wedges
  • 8 oz button mushrooms, halved
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, garlic, and ginger to create the marinade.
  2. Place chicken pieces in a zip-top bag or bowl; pour half of the marinade over the chicken. Marinate for at least 30 minutes.
  3. While the chicken marinates, chop bell pepper, onion, and mushrooms into uniform pieces.
  4. Thread chicken and veggies onto soaked wooden skewers alternately.
  5. Preheat grill to medium-high heat and grill skewers for 10-12 minutes, turning occasionally until charred and cooked through.
  6. Brush with reserved marinade during the last few minutes of grilling for added flavor.
