  • 4 salmon fillets (about 6 oz each)
  • 1 cup fresh pineapple chunks
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, sliced
  • 1 tbsp sesame oil
  • 1 cup jasmine or sushi rice
  • 2 cups water

Instructions

  1. Prepare the rice: Combine rice and water in a saucepan. Bring to a boil, then cover and simmer on low heat for about 15 minutes until cooked.
  2. Make the teriyaki sauce: In a bowl, mix soy sauce, brown sugar, garlic, ginger, and sesame oil.
  3. Sear the salmon: Heat oil in a skillet over medium-high heat. Cook salmon fillets skin-side down for about 4-5 minutes until golden brown. Flip carefully.
  4. Add pineapple & sauce: Pour teriyaki sauce and pineapple over salmon; cook together for another 3-4 minutes until everything is heated through.
  5. Assemble: Fluff cooked rice in bowls and top with the salmon and pineapple mixture. Garnish with green onions before serving.
