  • 1 can (15 oz) sweet corn, drained
  • 1 red bell pepper, finely chopped
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, finely chopped (optional)
  • 1/4 cup fresh cilantro leaves, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients on your counter for easy access.
  2. In a colander, drain the black beans and sweet corn; rinse them under cold water.
  3. Finely chop the red bell pepper, red onion, jalapeño pepper (if using), and cilantro.
  4. In a large mixing bowl, combine the black beans, corn, chopped veggies, lime juice, olive oil, salt, and pepper. Stir well until everything is evenly coated.
