Ingredients

  • 2 cups full-fat coconut milk
  • 1 stalk fresh lemongrass, finely chopped
  • 2 tbsp Thai red curry paste (adjust to taste)
  • 1 cup boneless chicken thighs or firm tofu, cut into bite-sized pieces
  • 1 cup mushrooms (shiitake or button), sliced
  • 2 tbsp fresh lime juice
  • ¼ cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Prep your ingredients: Chop lemongrass and protein into bite-sized pieces.
  2. Sauté aromatics: Heat oil in a large pot over medium heat; add onions and cook until translucent.
  3. Add coconut milk & curry paste: Pour in coconut milk and stir in curry paste until blended.
  4. Incorporate chicken or tofu: Add the protein and cook for 5-7 minutes for chicken or until heated through for tofu.
  5. Add vegetables: Stir in sliced mushrooms and any other desired veggies; simmer until tender.
  6. Finish with lime & cilantro: Remove from heat, add lime juice, and garnish with cilantro before serving.
