  • 2 cups cauliflower florets
  • 6 large lettuce leaves (iceberg or butter)
  • 2 tbsp Thai red curry paste
  • 1 cup full-fat coconut milk
  • ¼ cup fresh cilantro, chopped
  • 2 green onions, sliced (for topping)
  • ¼ cup chopped peanuts (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potatoes and cauliflower in olive oil, salt, and pepper; spread evenly on the baking sheet.
