Description

Ingredients

  • 9 lasagna noodles (regular or no-boil)
  • 4 cups ripe tomatoes, chopped
  • 1 lb lean ground beef or sausage
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Italian herbs (e.g., basil, oregano) to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil. Sauté minced garlic and chopped onion until soft (about 5 minutes).
  3. Add ground meat; cook until browned (7-10 minutes).
  4. Stir in chopped tomatoes, salt, pepper, and herbs. Simmer for 15 minutes until thickened.
  5. Layer a thin layer of sauce at the bottom of the baking dish; top with noodles, ricotta (mixed with egg if desired), meat sauce, mozzarella, and repeat layers ending with noodles topped with mozzarella and Parmesan.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake another 10-15 minutes until bubbly.
