Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup whole wheat breadcrumbs
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tbsp ground flaxseed mixed with 6 tbsp water
- 1 tsp cumin
- 1 tsp paprika
- ¼ cup fresh parsley, chopped
- 2 tbsp olive oil
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mash the chickpeas with a fork until mostly smooth but still chunky.
- Stir in the breadcrumbs, garlic powder, onion powder, flaxseed mixture, cumin, paprika, parsley, and salt until well combined.
- Shape the mixture into nugget-sized pieces.
- Place on a parchment-lined baking sheet and brush lightly with olive oil.
- Bake for 20-25 minutes until golden brown and crispy.
