  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup whole wheat breadcrumbs
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tbsp ground flaxseed mixed with 6 tbsp water
  • 1 tsp cumin
  • 1 tsp paprika
  • ¼ cup fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mash the chickpeas with a fork until mostly smooth but still chunky.
  3. Stir in the breadcrumbs, garlic powder, onion powder, flaxseed mixture, cumin, paprika, parsley, and salt until well combined.
  4. Shape the mixture into nugget-sized pieces.
  5. Place on a parchment-lined baking sheet and brush lightly with olive oil.
  6. Bake for 20-25 minutes until golden brown and crispy.
