  • 1 cup all-purpose flour (120g)
  • 1/2 cup unsweetened cocoa powder (50g)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup maple syrup (120ml)
  • 1/3 cup vegetable oil (80ml)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. In another bowl, mix the maple syrup, vegetable oil, vanilla extract, and grated zucchini until well combined.
  5. Pour the wet ingredients into the dry ingredients and fold gently until just combined; do not overmix.
  6. Transfer the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Allow cooling in the pan for ten minutes before transferring to a wire rack to cool completely.
