- 1/2 tsp salt
- 1/2 cup maple syrup (120ml)
- 1/3 cup vegetable oil (80ml)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Grate the zucchini and squeeze out excess moisture using a clean towel.
- In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, mix the maple syrup, vegetable oil, vanilla extract, and grated zucchini until well combined.
- Pour the wet ingredients into the dry ingredients and fold gently until just combined; do not overmix.
- Transfer the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
