  • 2 ripe pears, diced
  • 1 ½ cups unsweetened almond milk
  • ½ cup sliced almonds (plus extra for topping)
  • 1 tsp cinnamon
  • ¼ cup pure maple syrup
  • 2 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, combine oats, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together almond milk and maple syrup.
  4. Pour wet ingredients into dry ingredients and mix gently until combined.
  5. Fold in diced pears and half of the sliced almonds.
  6. Transfer mixture to the prepared baking dish and sprinkle remaining almonds on top.
  7. Bake for 30-35 minutes until golden brown around the edges.
