Ingredients

  • 1 lb ribeye steak
  • 1 lb baby potatoes, halved
  • 4 cloves fresh garlic, smashed
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss halved baby potatoes in a bowl with olive oil, salt, pepper, and chopped rosemary. Spread on a lined baking tray.
  3. Roast potatoes for 25 minutes until golden brown and tender.
  4. While the potatoes roast, heat a skillet over medium-high heat with olive oil. Season the ribeye steak with salt and pepper, then add it to the hot pan.
  5. After 4-5 minutes, flip the steak, add butter and smashed garlic cloves to the pan. Baste continuously until desired doneness is reached.
  6. Serve the steak alongside roasted potatoes and drizzle any remaining garlic butter over the top.
