- 2 cups sushi rice, rinsed
- 2 1/2 cups water
- 8 oz fresh salmon fillets, diced
- 1/4 cup mayonnaise (preferably Kewpie)
- 2 tbsp Sriracha sauce (adjust to taste)
- 1 tbsp rice vinegar
- 2 green onions, thinly sliced
- 1 tbsp toasted sesame seeds
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13 baking dish.
- In a medium saucepan, combine sushi rice and water according to package instructions. Cook until tender, then mix in rice vinegar and set aside.
- In a bowl, combine diced salmon, mayonnaise, Sriracha sauce, salt, and pepper. Mix well.
- Spread the cooked sushi rice evenly in the baking dish. Pour the salmon mixture on top and spread it evenly.
- Bake for 15-20 minutes until heated through and slightly golden on top.
- Garnish with green onions and sesame seeds before serving warm.
