- 1.5 cups shredded Monterey Jack or Cheddar cheese
- 4 large flour tortillas
- 2 tbsp extra virgin olive oil (divided)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- ½ cup sour cream or Greek yogurt
- Juice of 1 lime
Instructions
- Marinate chicken in olive oil, cumin, paprika, salt, and pepper for at least 10 minutes.
- Cook chicken in a skillet over medium heat for about 6-7 minutes per side until golden brown and reaches an internal temperature of 165°F (75°C). Let rest before dicing.
