  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 2 cups fresh spinach
  • 1.5 cups shredded Monterey Jack or Cheddar cheese
  • 4 large flour tortillas
  • 2 tbsp extra virgin olive oil (divided)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • ½ cup sour cream or Greek yogurt
  • Juice of 1 lime

Instructions

  1. Marinate chicken in olive oil, cumin, paprika, salt, and pepper for at least 10 minutes.
  2. Cook chicken in a skillet over medium heat for about 6-7 minutes per side until golden brown and reaches an internal temperature of 165°F (75°C). Let rest before dicing.
  3. In the same skillet, add more olive oil if needed and sauté spinach until wilted (2-3 minutes).
  4. To assemble, place one tortilla in the skillet, sprinkle half with cheese, then layer with diced chicken and sautéed spinach. Add more cheese on top and fold.
  5. Cook each quesadilla for about 3-4 minutes per side until golden brown and crispy. Slice into wedges and serve hot with sour cream or lime juice.
