Description

Lemon Coconut Freeze Bars are a delightful summer treat that combines zesty lemon with creamy coconut for an irresistible flavor sensation. These refreshing bars are perfect for hot days, providing a cool and satisfying dessert that everyone will love.


Ingredients

  • 1 cup coconut cream (full-fat)
  • ½ cup fresh lemon juice (about 34 lemons)
  • Zest of 2 lemons
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • ½ cup shredded coconut (toasted or plain)
  • ¼ cup pineapple juice (optional)

Instructions

  1. Prepare your ingredients by zesting and juicing the lemons.
  2. In a blender, combine coconut cream, lemon juice, lemon zest, honey or maple syrup, and vanilla extract. Blend until smooth.
  3. Gently fold in shredded coconut using a spatula.
  4. Line an 8×8 inch baking pan with parchment paper and pour the mixture into it, spreading evenly.
  5. Freeze for at least four hours until solid.
  6. Once frozen, remove from the pan using the parchment paper and slice into bars.
