- ½ cup fresh lemon juice (about 3–4 lemons)
- Zest of 2 lemons
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- ½ cup shredded coconut (toasted or plain)
- ¼ cup pineapple juice (optional)
Instructions
- Prepare your ingredients by zesting and juicing the lemons.
- In a blender, combine coconut cream, lemon juice, lemon zest, honey or maple syrup, and vanilla extract. Blend until smooth.
- Gently fold in shredded coconut using a spatula.
- Line an 8×8 inch baking pan with parchment paper and pour the mixture into it, spreading evenly.
- Freeze for at least four hours until solid.
- Once frozen, remove from the pan using the parchment paper and slice into bars.
