- 1 medium cucumber, diced
- 2 tbsp fresh dill, chopped
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 small red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- 1. Cook the Chicken: Preheat your grill or skillet over medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until cooked through and juices run clear.
- 2. Prepare Tzatziki Sauce: In a bowl, mix Greek yogurt, minced garlic, diced cucumber (drained), lemon juice, dill, salt, and pepper until smooth.
- 3. Chop Vegetables: While the chicken cools slightly, chop cherry tomatoes and red onion into bite-sized pieces.
- 4. Combine: Slice cooled chicken into chunks and add it to a large bowl with chopped vegetables. Pour tzatziki sauce over everything and gently mix until well coated.
- 5. Serve: Transfer to plates or bowls and garnish with extra dill if desired. Enjoy chilled or at room temperature.
