Description

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup Greek yogurt (full-fat or low-fat)
  • 1 medium cucumber, diced
  • 2 tbsp fresh dill, chopped
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. 1. Cook the Chicken: Preheat your grill or skillet over medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until cooked through and juices run clear.
  2. 2. Prepare Tzatziki Sauce: In a bowl, mix Greek yogurt, minced garlic, diced cucumber (drained), lemon juice, dill, salt, and pepper until smooth.
  3. 3. Chop Vegetables: While the chicken cools slightly, chop cherry tomatoes and red onion into bite-sized pieces.
  4. 4. Combine: Slice cooled chicken into chunks and add it to a large bowl with chopped vegetables. Pour tzatziki sauce over everything and gently mix until well coated.
  5. 5. Serve: Transfer to plates or bowls and garnish with extra dill if desired. Enjoy chilled or at room temperature.
