  • 2 ripe mangoes, diced
  • 1 cup cucumber, chopped
  • 1 red bell pepper, chopped
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup toasted peanuts, roughly chopped
  • 1/4 cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp honey or maple syrup
  • 1 garlic clove, minced

Instructions

  1. Wash and prepare all fresh produce. Dice mangoes into bite-sized cubes and chop cucumbers and red bell pepper.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, and minced garlic until smooth. Adjust consistency with water if desired.
  3. In a large bowl, combine diced mangoes, cucumber, bell pepper, green onions, and cilantro. Drizzle with the dressing and toss gently to combine.
  4. Add toasted peanuts last to maintain crunchiness.
  5. Serve immediately for maximum freshness or keep dressing separate until serving.
