  • 4 boneless, skinless chicken breasts
  • 1 cup fresh parsley, finely chopped
  • 2 tbsp fresh oregano, finely chopped
  • 1/4 cup red wine vinegar
  • 4 garlic cloves, minced
  • 1/2 cup extra virgin olive oil
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp honey or maple syrup

Instructions

  1. Prepare the marinade by mixing parsley, oregano, garlic, vinegar, olive oil, red pepper flakes, salt, and pepper in a bowl.
  2. Marinate the chicken in half of the chimichurri marinade for at least 30 minutes in the refrigerator.
  3. Preheat grill to medium-high heat (400°F). Grill chicken for 6-8 minutes on each side until fully cooked (165°F internal temperature).
  4. In another bowl, whisk together sour cream or yogurt, lemon juice, Dijon mustard, and honey/maple syrup to make the garlic sauce.
  5. Slice grilled chicken and serve over rice or quinoa drizzled with remaining chimichurri sauce and garlic sauce.
