- 4 boneless, skinless chicken breasts
- 1 cup fresh parsley, finely chopped
- 2 tbsp fresh oregano, finely chopped
- 1/4 cup red wine vinegar
- 4 garlic cloves, minced
- 1/2 cup extra virgin olive oil
- 1/2 tsp red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 1/2 cup sour cream or Greek yogurt
- 2 tbsp freshly squeezed lemon juice
- 1 tsp Dijon mustard
- 1 tbsp honey or maple syrup
Instructions
- Prepare the marinade by mixing parsley, oregano, garlic, vinegar, olive oil, red pepper flakes, salt, and pepper in a bowl.
- Marinate the chicken in half of the chimichurri marinade for at least 30 minutes in the refrigerator.
- Preheat grill to medium-high heat (400°F). Grill chicken for 6-8 minutes on each side until fully cooked (165°F internal temperature).
- In another bowl, whisk together sour cream or yogurt, lemon juice, Dijon mustard, and honey/maple syrup to make the garlic sauce.
- Slice grilled chicken and serve over rice or quinoa drizzled with remaining chimichurri sauce and garlic sauce.
