  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 6 cloves fresh garlic, minced
  • 4 tbsp unsalted butter (divided)
  • 2 cups low-sodium beef broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried rosemary
  • 1 tsp dried thyme

Instructions

  1. Cut the beef chuck roast into bite-sized pieces and wash the baby potatoes.
  2. In a skillet over medium heat, melt 2 tablespoons of butter and sauté the minced garlic until fragrant.
  3. Layer the beef at the bottom of the crockpot followed by the halved potatoes. Pour sautéed garlic and melted butter over them.
  4. Add beef broth until just covered, then season with salt, pepper, rosemary, and thyme.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Serve hot, drizzled with sauce from the pot.
