  • 9 oz cheese tortellini
  • 8 oz sirloin steak
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in boiling salted water until tender. Drain, reserving some pasta water.
  2. Season the steak with salt and pepper. Sear in olive oil over medium-high heat for 3-4 minutes per side until medium-rare. Let rest before slicing thinly.
  3. In the same skillet, sauté garlic until fragrant. Gradually stir in heavy cream.
  4. Mix in Parmesan cheese until melted. If needed, add reserved pasta water for desired consistency.
  5. Fold in cooked tortellini and sliced steak until well coated. Warm through.
  6. Serve hot, garnished with parsley and additional Parmesan.
