- 1 cup sun-dried tomatoes (packed in oil)
- 1 cup crumbled feta cheese
- 2 cups fresh baby spinach
- 4 garlic cloves (minced)
- 2 tsp dried oregano
- ½ cup pine nuts (toasted)
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat, add minced garlic, and sauté until fragrant.
- Add spinach and cook until wilted. Stir in toasted pine nuts, sun-dried tomatoes, oregano, salt, and pepper.
