  • 34 lbs boneless pork loin
  • 1 cup sun-dried tomatoes (packed in oil)
  • 1 cup crumbled feta cheese
  • 2 cups fresh baby spinach
  • 4 garlic cloves (minced)
  • 2 tsp dried oregano
  • ½ cup pine nuts (toasted)
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat, add minced garlic, and sauté until fragrant.
  3. Add spinach and cook until wilted. Stir in toasted pine nuts, sun-dried tomatoes, oregano, salt, and pepper.
  4. Remove from heat and let cool slightly before mixing in crumbled feta.
  5. Butterfly the pork loin using a sharp knife to create space for stuffing.
  6. Generously fill the pork loin with the mixture, roll tightly, and secure with kitchen twine or toothpicks.
  7. Place on a baking sheet lined with parchment paper and roast for 25-30 minutes until the internal temperature reaches 145°F (63°C).
