- 1 whole chicken (4–5 pounds)
- 6 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1/4 cup fresh lime juice
- 1/4 cup extra virgin olive oil
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 1 tsp chili powder
Instructions
- Preheat oven to 425°F (220°C).
- In a bowl, mix garlic, cumin, paprika, lime juice, olive oil, soy sauce, honey, and chili powder until well combined.
- Place the chicken in a resealable bag or bowl and pour the marinade over it. Seal or cover and marinate in the fridge for at least 1 hour (overnight preferred).
- Place the marinated chicken breast-side up in a roasting pan. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C). Baste halfway through with its juices.
- Let the chicken rest for 10-15 minutes before carving.
