- 4 medium bell peppers (any color)
- 1 lb lean ground turkey
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded mozzarella cheese
- 2 tsp Italian seasoning
- 1 tsp paprika
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- In a skillet over medium heat, add olive oil and sauté onion and garlic until translucent (about 2-3 minutes).
- Add ground turkey and cook until browned (5-7 minutes). Stir in diced tomatoes, Italian seasoning, paprika, salt, and pepper; simmer for another 2 minutes.
- Slice the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
- Fill each pepper generously with the turkey mixture and top with shredded cheese.
- Cover with foil and bake for 30 minutes. Remove foil for the last 10 minutes to brown the cheese.
