Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup long-grain white rice
  • Salt and pepper, to taste
  • 1 tsp paprika
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and paprika; cook until golden brown (about 6 minutes per side).
  2. Add chopped onion and minced garlic; sauté until onions are translucent (3-4 minutes).
  3. Pour in chicken broth and cream of mushroom soup; stir to combine.
  4. Sprinkle uncooked rice evenly over the mixture and bring to a simmer. Cover and cook for about 20 minutes or until rice is tender.
  5. Fluff the rice with a fork before serving and garnish with fresh parsley.
