- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, mashed
- 2 tsp paprika
- 1 tsp cayenne pepper
- 2 tbsp freshly squeezed lemon juice
- ¼ cup fresh cilantro, chopped
- 3 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Chop shrimp into bite-sized pieces and mix with paprika and cayenne in a bowl.
- Heat 1 tbsp olive oil in a skillet over medium heat. Sauté shrimp until pink and slightly crispy, about 3-4 minutes.
- In another bowl, combine mashed avocados, lemon juice, and cilantro until creamy yet chunky.
- Layer phyllo sheets, brushing each layer with olive oil. Cut into squares and place in muffin tins to form cups.
- Fill each phyllo cup with sautéed shrimp and top with the avocado mixture.
- Bake for 15-20 minutes or until golden brown.
