Description

Spicy Shrimp & Avocado Phyllo Cups are a deliciously vibrant appetizer, combining succulent shrimp and creamy avocado in crispy phyllo cups. Perfect for entertaining or any gathering.


Ingredients

  • 8 sheets phyllo dough
  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, mashed
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 2 tbsp freshly squeezed lemon juice
  • ¼ cup fresh cilantro, chopped
  • 3 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Chop shrimp into bite-sized pieces and mix with paprika and cayenne in a bowl.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Sauté shrimp until pink and slightly crispy, about 3-4 minutes.
  3. In another bowl, combine mashed avocados, lemon juice, and cilantro until creamy yet chunky.
  4. Layer phyllo sheets, brushing each layer with olive oil. Cut into squares and place in muffin tins to form cups.
  5. Fill each phyllo cup with sautéed shrimp and top with the avocado mixture.
  6. Bake for 15-20 minutes or until golden brown.
