Ingredients

  • 4 cups fresh baby spinach
  • 2 cups short pasta (fusilli or rotini)
  • 1 cup block feta cheese, crumbled
  • 1 cup dried cranberries
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Cook the pasta in boiling salted water until al dente, then drain and cool under cold water.
  2. Rinse the spinach thoroughly and place it in a large mixing bowl.
  3. Add cooled pasta, crumbled feta, dried cranberries, and optional walnuts to the bowl with spinach.
