  • 1 cup full-fat coconut milk
  • 1/3 cup granulated sugar (for filling)
  • 2 tbsp cornstarch
  • 1 tsp pure vanilla extract
  • 1 tbsp lemon juice
  • 1 cup mixed fresh fruits (strawberries, kiwi, blueberries)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour and sugar. Cut in cold butter until mixture resembles coarse crumbs. Form into a disk and chill.
  2. Roll out chilled dough on a floured surface and transfer to a tart pan. Prick with a fork and bake for about 20 minutes until golden brown. Cool completely.
  3. In a saucepan over medium heat, whisk together coconut milk, sugar, cornstarch, and vanilla until smooth. Stir continuously for about 5-7 minutes until thickened. Remove from heat and stir in lemon juice.
  4. Pour the coconut filling into the cooled crust; refrigerate until set (at least two hours).
  5. Once set, arrange fresh fruits on top before serving chilled.
