- 2 lbs beef chuck roast
- 1 large onion, finely chopped
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 cup red wine
- 2 tbsp extra virgin olive oil
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the beef until browned on all sides (3-4 minutes per side). Remove from pot.
- In the same pot, add onions, carrots, celery, and garlic. Sauté until softened (5-7 minutes).
- Pour in red wine and scrape any browned bits from the bottom. Stir in crushed tomatoes.
- Return the seared beef to the pot. Add thyme, bay leaf, salt, and pepper.
- Reduce heat to low and cover. Simmer for 2-3 hours until meat is fork-tender.
- Before serving, remove bay leaf and serve over pasta or polenta with grated Parmesan if desired.
