  • 2 lbs Chuck Roast, cubed
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 2 Bell Peppers (any color), chopped
  • 28 oz Canned Diced Tomatoes
  • 2 tbsp Chili Powder
  • 1 tsp Cumin
  • 15 oz Kidney Beans, drained and rinsed
  • 4 cups Beef Broth
  • Optional: Sour Cream for serving

Instructions

  1. Prepare your ingredients by chopping onions, garlic, bell peppers, and cubing the chuck roast.
  2. In a large pot over medium heat, add oil and sauté onions until translucent. Then add garlic and bell peppers; cook until softened.
  3. Increase heat to high and brown the chuck roast on all sides for about 5 minutes.
  4. Stir in canned tomatoes with their juices and kidney beans; let this mixture bubble for a few minutes.
  5. Add beef broth along with chili powder and cumin; stir well. Reduce heat to low and simmer for 1-2 hours.
  6. Once done, serve hot with optional sour cream on top.
