  • 8 oz steak (sirloin or ribeye), diced
  • 2 medium Yukon Gold potatoes, diced (about 1 cup)
  • 1 medium yellow onion, chopped
  • 1 cup bell peppers (red or yellow), chopped
  • 2 cloves garlic, minced
  • 4 large eggs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Dice the potatoes into bite-sized cubes and chop the onion and bell peppers.
  2. Heat olive oil in a large skillet over medium heat. Add diced potatoes, season with salt and pepper, and cook for 10-12 minutes until golden brown, stirring occasionally.
  3. Add the chopped onions and bell peppers to the skillet and cook for another 5-7 minutes until tender.
  4. Push the veggies to one side of the skillet and add diced steak on the other side. Cook for about 5 minutes until browned.
  5. Stir everything together in the skillet to combine flavors; reduce heat while you fry or poach eggs.
  6. Serve generously on plates topped with cooked eggs, adding hot sauce if desired.
