  • 2 cups snap peas, trimmed
  • 1 cup radishes, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced (seedless preferred)
  • ½ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse all vegetables under cold water. Trim the ends of the snap peas, slice radishes thinly, and dice the cucumber.
  2. In a large bowl, combine snap peas, radishes, cherry tomatoes, cucumber, and red onion. Toss gently.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, honey or maple syrup, salt, and pepper.
  4. Pour dressing over the vegetable mixture and toss until evenly coated.
  5. Sprinkle crumbled feta on top just before serving.
