  • 1 cup roasted beets (approximately 2 medium beets)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 2 tbsp extra virgin olive oil
  • Salt to taste

Instructions

  1. 1. Preheat oven to 400°F (200°C). Wrap fresh beets in foil and place on a baking sheet.
  2. 2. Roast beets for about 45-60 minutes until tender. Allow to cool slightly before peeling.
  3. 3. In a food processor, combine roasted beets, chickpeas, tahini, lemon juice, garlic, and salt. Blend until smooth.
  4. 4. While blending, drizzle in olive oil until you reach your desired consistency. Adjust with water if needed.
