  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup fresh basil leaves, chopped
  • 1/2 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 cup low-sodium chicken broth
  • 2 tbsp capers, rinsed and drained
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season both sides of the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Sear each chicken breast for about 5 minutes per side until golden brown and cooked through. Remove chicken from skillet.
  3. Add minced garlic to the skillet and cook until fragrant (30 seconds). Pour in chicken broth, scraping up browned bits.
  4. Stir in lemon juice and capers; simmer for about 3 minutes.
  5. Remove from heat and stir in chopped basil and butter until melted.
  6. Return chicken to the skillet, spooning sauce over each piece. Let soak in flavors for one minute before serving.
