Ingredients
- 8 oz soba noodles
- 1 cup bell peppers (sliced)
- 1 cup shredded carrots
- 1 cup cucumber (sliced)

- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 2 cloves garlic (minced)

Instructions
- Cook the soba noodles according to package directions (usually 4-5 minutes). Drain and rinse under cold water.
- While noodles cool, chop the bell peppers, shred the carrots, slice the cucumber, and chop the green onions.
