- 2 lemons, zested and juiced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme leaves
- 4 garlic cloves, minced
- 4 tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- 3 medium carrots, chopped
- 3 medium potatoes, chopped
Instructions
- Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels and season generously inside and out with salt and pepper.
- In a bowl, combine olive oil, minced garlic, rosemary, thyme, lemon zest, and juice to create an herb mixture.
- Gently lift the skin of the chicken breast and rub half of the herb mixture directly onto the meat.
- Place chopped carrots and potatoes in a roasting pan around the chicken. Drizzle them with olive oil and season lightly with salt and pepper.
- Roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (75°C), basting halfway through cooking.
- Remove from oven and let rest for 10 minutes before carving.
