Ingredients

  • 1 lb fresh salmon fillets
  • 2 tbsp chipotle peppers in adobo sauce (minced)
  • 3 tbsp pure honey
  • 2 tbsp lime juice (freshly squeezed)
  • 1 cup fresh pineapple (diced)
  • ¼ cup cilantro (chopped)
  • 8 small tortillas (corn or flour)
  • 1 avocado (sliced, optional)

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. Whisk together chipotle peppers, honey, and lime juice in a bowl to create the marinade.
  3. Place salmon in a shallow dish, pour half of the marinade over it, and let sit for 15 minutes.
  4. Grill salmon skin-side down for about 4-5 minutes until flaky.
  5. While the salmon cooks, combine pineapple, cilantro, and lime juice in a bowl to make the salsa.
  6. Warm tortillas on the grill for about 30 seconds per side.
  7. Flake salmon onto each tortilla and top with pineapple salsa and avocado slices if desired.
