  • 1 cup pearled barley
  • 2 cups fresh kale, chopped
  • 2 medium carrots, diced
  • 1 medium yellow onion, diced

  • 6 cups low-sodium beef broth
  • 2 tsp olive oil
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions
