Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 2 cans (15 oz each) chickpeas or cannellini beans, drained
  • 4 cups low-sodium vegetable broth
  • 4 cups kale or Swiss chard, chopped
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 2 bay leaves
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion; sauté until translucent (about 5 minutes). Stir in minced garlic.
  2. Add chopped carrots and celery; cook for another 3-4 minutes until slightly softened.
  3. Pour in vegetable broth and add drained beans. Stir well and simmer for about 10 minutes.
  4. Mix in chopped kale or Swiss chard; cook until wilted (3-5 minutes).
  5. Season with thyme, bay leaves, salt, and pepper. Simmer for an additional 5 minutes to blend flavors.
  6. Serve hot with a splash of lemon juice.
