Description

Air Fryer Zucchini Fritters are a crispy, savory snack that perfectly combines fresh zucchini with aromatic herbs and cheese. This healthier take on traditional fritters is made in an air fryer, which reduces oil while maintaining a delicious crunch. Perfect for parties, appetizers, or a quick afternoon treat, these flavorful bites will disappear quickly—especially when served warm with your favorite dipping sauce.

Ingredients

Scale
  • 2 medium zucchinis (about 300g)
  • 1 cup all-purpose flour
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ¼ cup chopped fresh herbs (basil or parsley)
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine the shredded zucchini, eggs, flour, Parmesan cheese, garlic powder, chopped herbs, salt, and pepper until well mixed.
  3. Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  4. Form small patties (about 2 inches wide) from the mixture.
  5. Lightly spray the air fryer basket with cooking spray and arrange the patties in a single layer.
  6. Cook for approximately 10 minutes or until golden brown and crispy.
  7. Serve warm with your favorite dipping sauce.
