  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: Pasta of choice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, ricotta cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined.
  3. Form the mixture into meatballs (about 2 tablespoons each) and place them on an oiled baking sheet.
  4. Bake for 20-25 minutes until golden brown.
  5. Meanwhile, in a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add fresh spinach and cook until wilted.
  6. Stir in heavy cream and additional Parmesan cheese until smooth. Season with salt and pepper.
