Ingredients

  • 34 boneless, skinless chicken breasts
  • Mixed greens (romaine or spinach)
  • Bell peppers (red or yellow)
  • Cucumber
  • Shredded carrots
  • Fresh cilantro
  • Dressing: fish sauce, lime juice, brown sugar, chili flakes, optional peanut butter

Instructions

  1. Season chicken breasts with salt and pepper. Grill over medium heat for 6-7 minutes per side until cooked through.
  2. While the chicken cooks, chop mixed greens, bell peppers, cucumber, carrots, and cilantro into bite-sized pieces.
  3. In a bowl, whisk together fish sauce, lime juice, brown sugar, chili flakes, and peanut butter until well combined.
