Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together softened butter and sugar until light and fluffy (3-4 minutes).
  3. Beat in eggs one at a time, then mix in vanilla extract until smooth.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Chill the dough in the fridge for 30 minutes (optional).
  6. Roll out dough on a floured surface to about ¼ inch thick and cut into egg shapes.
  7. Bake on prepared sheets for 8-10 minutes until edges are golden but centers are soft. Cool completely before decorating.
