  • ½ cup raspberry puree (fresh or frozen)
  • 1 tsp rose water
  • ½ cup unsalted butter (softened)
  • Food coloring (optional)

Instructions

  1. Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. In a clean bowl, whip room-temperature egg whites until foamy. Gradually add granulated sugar and whisk until stiff peaks form.
  3. Sift almond flour and icing sugar together twice into a separate bowl. Gently fold this mixture into the whipped egg whites until the batter flows like lava.
  4. Transfer the batter into a piping bag and pipe small circles onto the prepared sheets, leaving space between each.
  5. Let piped macarons rest for about 30 minutes until they form a skin. Bake for 15-20 minutes or until they lift off easily.
  6. For the filling, beat softened butter until creamy, then mix in raspberry puree and rose water until smooth.
  7. Assemble by pairing macaron shells and filling with raspberry rose mixture.
