Ingredients

  • 1 cup sushi rice
  • 2 cups water
  • 8 oz large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 medium cucumber, sliced
  • 1 ripe avocado, cubed
  • 1 medium carrot, grated or julienned
  • 2 sheets nori, cut into strips
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sriracha (adjust to taste)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with 2 cups of water according to package instructions (about 20 minutes). Let it rest for 10 minutes.
  2. In a skillet over medium heat, add olive oil and sauté shrimp for about 3 minutes on each side until pink and opaque.
  3. While the shrimp cooks, slice cucumber and avocado and grate the carrot.
  4. In a small bowl, mix soy sauce and sriracha together.
  5. Assemble bowls by scooping sushi rice as a base. Top with sautéed shrimp, sliced vegetables, and drizzle with sauce.
  6. Garnish with nori strips and serve immediately.
