- Oil for frying (about ½ cup)
Instructions
- In a large bowl, combine the canned salmon, breadcrumbs, eggs, green onions, dill weed, lemon juice, salt, and pepper until well mixed.
- Shape the mixture into small patties (about 2 inches wide).
- Heat oil in a skillet over medium heat until shimmering.
- Fry the patties in batches for 3-4 minutes per side or until golden brown.
- Transfer cooked croquettes to paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
