Ingredients

  • 1 can (14.75 oz) wild-caught salmon, drained and flaked
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • ¼ cup green onions, finely chopped
  • 2 tbsp fresh dill weed, chopped
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Oil for frying (about ½ cup)

Instructions

  1. In a large bowl, combine the canned salmon, breadcrumbs, eggs, green onions, dill weed, lemon juice, salt, and pepper until well mixed.
  2. Shape the mixture into small patties (about 2 inches wide).
  3. Heat oil in a skillet over medium heat until shimmering.
  4. Fry the patties in batches for 3-4 minutes per side or until golden brown.
  5. Transfer cooked croquettes to paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
