  • 1 lb boneless, skinless chicken thighs
  • 1 lb Andouille sausage (or kielbasa)
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes (fire-roasted if preferred)
  • 2 bay leaves
  • 3 cloves garlic, minced
  • 2 tsp cayenne pepper
  • 2 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and add oil. Sauté chopped onion, bell peppers, and celery for about five minutes until softened.
  2. Push vegetables aside and add chicken thighs and sliced sausage; brown until golden on all sides.
  3. Stir in minced garlic and spices; cook for one minute until fragrant.
  4. Pour in chicken broth and diced tomatoes; bring to a simmer while scraping up brown bits from the bottom.
  5. Add bay leaves and simmer uncovered for at least thirty minutes to meld flavors.
  6. Remove bay leaves before serving. Ladle gumbo over rice or serve alongside crusty bread.
