- 1 lb Andouille sausage (or kielbasa)

- 1 green bell pepper, chopped

- 4 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes (fire-roasted if preferred)
- 2 bay leaves
- 3 cloves garlic, minced
- 2 tsp cayenne pepper
- 2 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat and add oil. Sauté chopped onion, bell peppers, and celery for about five minutes until softened.
- Push vegetables aside and add chicken thighs and sliced sausage; brown until golden on all sides.
- Stir in minced garlic and spices; cook for one minute until fragrant.
- Pour in chicken broth and diced tomatoes; bring to a simmer while scraping up brown bits from the bottom.
- Add bay leaves and simmer uncovered for at least thirty minutes to meld flavors.
- Remove bay leaves before serving. Ladle gumbo over rice or serve alongside crusty bread.
