- 1 lb ground chicken
- 1/4 cup fresh parsley, chopped
- 3 cloves garlic, minced
- 2 tsp dried oregano
- Zest and juice of 1 lemon
- 1 cup orzo pasta
- 1/4 cup Parmesan cheese, grated
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). In a bowl, mix ground chicken, garlic, parsley, oregano, lemon zest, juice, Parmesan cheese, salt, and pepper gently.
- Form mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
- Bake for about 20 minutes until golden brown and cooked through (internal temperature of 165°F/74°C).
- Cook orzo in salted boiling water until al dente. Drain and set aside.
- In the same pot, heat olive oil, stir in lemon juice, season with salt and pepper, then add the cooked orzo back in. Toss well to combine.
- Serve the lemon orzo topped with meatballs and garnish with extra parsley if desired.
